Ghee rice






Ingredients:
2 medium cup Basmati rise
2 medium sized onion(diced along length)
5 tbspn ghee /clarified butter
6-7 cashewnut
Garam masalas- 1 bay leaf, 4 pepper corns, 4 cloves, 1" cinnamon , 3 cardamom

Method:
  • Wash the rice , drain water n keep aside for 10 mins.
  • Heat 3 tbsp ghee in a pressure cooker, add all the garam masalas one by one. Once they start to splutter add rice and fry nicely for 2-3 in ghee. Pour 2 1/2  same medium cup water .Add very little salt. Pressure cook for  2 whistle, turn off the gas.
  • Take a non-stick pan , add 2 tbspn ghee, add broken cashew-nuts , roast till golden brown . Add sliced onions and fry nicely till bright golden colour appears.


Open the lid of the pressure cooker, after the pressure is fully released. Give a gentle stir to the rice and transfer the contents of pan (fried cashews n fried onions) into the rice . mix both gently.




  • Ghee rice goes well with chicken curry or any other curry.

Preparation time : 45 mins
serves: 2-3
